Not Quite the "Cooking" Kind... Yet!

Okay so I was thinking today (you know when your mind just wanders and you don't know what lead you there?) and I have a very short list of things that I know how to cook. In college I ate out, ate cereal, frozen pizza, yogurt, well anything that required NO effort to make. So I figure this needs to stop soon since Luke will want to eat something other than cereal. If you have ever seen him eat you know that it is important that I learn to cook. I don't doubt that I can follow a recipe I just don't have any! I will be raiding my mom's recipes and calling her a lot I am sure. But I wanted to see what you have and are willing to share! So this is my request... Please post any recipe you have that is not too demanding of the chef and that should be hard to mess up :)

Yes, Luke is aware of the inability to cook issue that I have and he has said many times that he will be doing the cooking. Honestly that may be a safer way for him to eat after we are married. However, I would like to be able to cook and serve him in that way as his wife.

P.S. Luke is not a picky eater at all! So pretty much anything goes :)

hey Jessica! I just found your blog on facebook-check mine out when you have a chance :) I have a recipe that I love that I think you will be able to do...it's super easy. And don't worry about the whole cooking thing-I'm still learning and we've been married almost 4 years :)

Taco soup (It's really yummy!)
Need:
1lb of ground beef
ranch dreesing packet
taco seasoning packet
16 oz. can of corn
16 oz. can of pinto beans
16 oz. can of chili beans
16 oz. can of stewed tomatoes
16 oz. can of rotel (tomatoes and green chiles)
onion

Brown the beef and onion together. Drain and rinse. Mix with seasoning packets and then combine all ingredients in a large pot. Simmer on low heat for 1 hour.

I am NOT a very good cook but I will work on getting some simple things ready for you. I like recipes that have like four or five ingredients!!! I actually have some of my favorites on the computer. Just send me your address and I'll email them on to you.

This is Shephard's Pie (Luke loved this at our house)
You can adjust to a smaller size but I'll warn you the kid can eat him some Shephard's Pie now! This recipe makes a 9x13 pan, I use a glass pan just seems to turn out better...

Brown on stove top then drain if there is any grease:
2 lbs ground turkey or beef (turkey is cheaper and what I usually use)
Onion - chopped

Stir in:
3 cans cut green beans (drained)
3 cans tomato soup

Transfer mixture to greased or sprayed 9x13 pan, put in oven at 350 till bubbly. In the meantime boil some water add potatoes make mashed potatoes with butter and milk or buy a container of mashed potatoes (this does save time and is just as good, if you do use store bought mashed taters microwave before putting on meat mixture)

When meat mixture is bubbly sprinkle a layer of shredded cheddar cheese on top then spread mashed potatoes then another layer of cheese.

Return to oven and bake till everything is hot and bubbly.

I like to serve with some kind of bread or biscuit and a salad...and wa-la you have dinner:)

You can substitute any kind of veggie or soup, my friend makes her shephard's pie with corn and cream of mushroom soup.

Crock-Pot Chicken Soft Tacos

1-lb chicken breasts
1 jar salsa (I use Pace)
1 packet taco seasoning

Spray crock-pot with Pam.

Place chicken on bottom of crock pot. (I use 4 frozen chicken breasts from Sam's, but you can use fresh; this will cut down on cooking time.) Sprinkle chicken with taco seasoning (I use about 1/2-packet since a whole packet makes the mixture too salty). Pour entire jar of salsa over chicken.

Cook on low for 4-6 hours, or until tender.

Take two forks and shred the chicken, allowing the shredded pieces to be re-absorbed into the juices in the pot.

Let set a few minutes while you prepare the soft shells per package instructions.

Place about 2-tablespoons of chicken into each shell. Serve with cheese, lettuce, chopped tomatoes, and sour cream.

I also make a side of yellow rice and black beans.

This recipe makes enough chicken for about 10-12 soft tacos. I use the left over chicken as topping for salad the next day.

Chicken Casserole

4 or 5 Chicken Breasts (depends on how much chicken you like)
2 Cans of Cream of Chicken Soup
1 16 Oz Sour Cream
2 Tubes of Ritz Crackers
2 Tablespoons of Butter

Preheat oven to 350 degrees

Microwave chicken until it is fully cooked through and let cool.

In a bowl mix together sour cream and and soup. Shred chicken and add to soup mixture.

In a seperate bowl melt butter and crush crackers. Coat cracker crumbs with the butter.

Spread chicken mixture into a 9 inch casserole dish. Sprinkle crackers on top. Bake in the oven until golden brown on top and bubbly.

This was my favorite thing my Nana fixed for breakfast growing up, and I still love it...Shane has come to enjoy it too!

1 lb Sausage (I use mild)
4 large eggs
2/3 c milk
1 teaspoon dry mustard
2 c grated cheese
8 oz sour cream
2 pie shells (the regular kind in frozen section)

Brown, crumble, drain sausage. line pie shells with sausage.

beat eggs. add milk, mustard, sour cream, and cheese. mix and pour over sausage.
bake at 350 for 20-25 minutes.

You can freeze it as well after you bake it (since it makes 2!) Just wrap in foil and place in Ziploc. When you want to cook, do NOT thaw, just bake at 350 for about an hour.

Ok so I have fooled Shane into thinking that this is the hardest thing to make and he LOVES it
Chicken and Rice

1.Cook Rice follow box directions (however much the 2 of you will eat!I usually make about 3 cups) I usually boil it in chicken broth to give it more flavor

2. Cut up about 4 bonless chicken breasts (I do it into cubes)

3. Put Rice and Chicken in casserol dish

4. Mix in 1 can of cream of chicken soup and !-2 cans of cream of mushroom soup.

5. Mis it all together and put it in the oven at 350 for 45 min- 1 hour.

Its easy and REALLY good!
